Helga's Herb Salt
3 cups Sea Salt
Fresh herbs: Basil, Thyme, Parsley, Garlic, Hot Pepper (Hungarian), Rosemary
Put herbs into food processor; pulse until ground. Dry for 24 hours or 2 to 3 hours in 150 degree oven on cookie sheet. Pulse salt and dried herbs in food processor to combine well. Delicious sprinkled on eggs, soups, meats or vegetables.
Alaena's Bread Dough Cinnamon Rolls
Put into bread machine pan in order listed: 1-1/4 cups water, 1 teaspoon salt, 1 teaspoon lemon juice, 2 Tablespoons granulated sugar, 1 Tablespoons salad oil, 3 - 1/2 cups bread flour, 1 teaspoon dry yeast. Set to dough setting (takes about 1 hour). When done, pull/roll dough into rectangle; spread with soft butter, top with brown sugar and sprinkle with cinnamon. Roll up. Cut into 12 slices. Place in greased 9 X 12 pan. Let raise until doubled. Bake at 350 degrees, about 20 to 25 minutes, until golden brown. Turn out of pan while hot, onto waxed paper. When cool, frost with powdered sugar icing. Add vanilla or lemon flavoring, if desired.
Fanny May Fudge
Combine in large saucepan: 4 cups sugar, 1 cup whole milk, cup butter, 1 teaspoon vanilla. Stir until melted. Add: 5 oz. miniature marshmallows and stir until melted. Add 2 oz. unsweetened baking chocolate, 12 oz. bag milk chocolate chips, 12 oz. semisweet chocolate chips, one at a time, stirring each until melted. May add chopped almonds, walnuts, cashews or pecans. Pour into buttered 11 X 13 pan. Cool. Cut into squares.
Focaccia Herb Bread
Place the following ingredients in the bread machine, in the order listed: 1-1/4 cups warm water, 1 teaspoon lemon juice, 1 Tablespoon sugar, 1 teaspoon salt, 3 Tablespoons Olive Oil. Add: 3 cups bread flour, sprinkle with 2 teaspoons instant yeast. Put on dough cycle. When done, stretch dough out on 11 X 16 baking sheet, lightly greased with olive oil. Prick all over with a fork. Brush with olive oil. Sprinkle 1 teaspoon dried rosemary and 1 teaspoon parsley over dough. Chop up about 1/2 tomato finely, and sprinkle that over dough. Sprinkle with sea salt (I used Helga's herb/sea salt combination) and garlic powder. Sprinkle about 1/2 cup mozzarella or parmesan cheese over all. Bake at 350 degrees for about 15 or 20 minutes, until done.

Clone of Cinnabon
1 cup warm milk (110 degrees F)
2 eggs, room temperature
1/2 cup white sugar
1/3 cup butter, melted
4-1/2 cups bread flour
1 teaspoon salt
2-1/2 teaspoons bread machine yeast
Filling:
2-1/2 tablespoons cinnamon
1 cup brown sugar
1/3 cup butter, softened
Frosting:
1 - (3oz) package cream cheese
1/4 cup butter, softened
1-1/2 cups confectioners' sugar
1/2 teaspoon vanilla
1/8 teaspoon salt
Directions:
1. Place dough ingredients (first 7) in the pan of the bread machine in the
order recommended by the manufacturer. Select the dough cycle & start.
2. After the dough has doubled in size turn it out onto a lightly floured
surface, cover and let rest for 10 minutes. In a small bowl, combine brown
sugar and cinnamon.
3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and
sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12
rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise
until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees
F.
4. Bake rolls in preheated oven until golden brown, about 15 minutes. (I bake
mine a couple of extra minutes because I think Cinnabons are a little
too doughy.) While the rolls are baking, beat together cream cheese, 1/4 cup
butter, confectioners' sugar, vanilla extract and salt. Spread frosting
on warm rolls before serving.
I have baked, frosted and frozen the rolls and then put them in the microwave on a low setting to thaw and serve. They seem to freeze well.
